Need simple pork chop recipe using these ingredients that I have on-hand.?

I have a family size pack of thick pork chops, and these are things I have around to work with:

bag of rice, chicken & beef broth, olive oil, dried herbs (thyme, sage, oregano, parsely, basil, & bay leaves), red potatoes, a bag of seasoning blend (onions, bell peppers, celery), BBQ sauce, and lots of seasonings/spices.

I'm having to cook for last-minute guests, and that's what I've got to work with right now without having to run to grocery store. I have fresh & frozen vegetables to use as a side dish.

Anyone have anything simple & quick that I can do using those ingredients??
I have flour on hand and roux & gravy mixes if anyone has any suggestions that call for gravy or a roux.
Also have bacon & sausage. I have chicken, but these people aren't big chicken eaters or else I wouldn't be asking for help! lol I can think of a 100 ways to cook chicken but rarely ever cook pork!

Do not overcomplicate things.

Season chops with salt, pepper and a little cayenne

Place them in a skillet and top with onions, peppers, celery combo. Add a touch of worschestire sauce and some dried oregano. Cover and place over med low heat for 1 hour.

You now have smothered pork chops that are healthy.

For rice, melt 2T butter in pan until foamy. Add some onions and garlic and sweat until translucent. Pour in rice and saute until rice is a little nutty 2-3 min. Add chicken stock to rice until the water comes up to your first knuckle of your index finger when it just touches the top of the rice (that is the proper way to measure water with rice, old asian trick) Bring to a boil, reduce heat to low, cover and cook until water is gone.

Serve pork chops over rice. Enjoy. Congrats, you made a delicious and gourment type meal with very little headache and slaving in kitchen, and you can enjoy your guests.
